Gooey Caramel Corn, Anyone???


During the school week there are three days that I keep a friends kids. I always try to come up with some kind of snack to feed the hungry monsters children as soon as they get here!!
I am the worst person to assign snack duty too!!! When I was growing up and we came home from school, Do you know what my snack was??  A bowl of cereal!! My brothers too!! and my kids think I'm crazy when I suggest that to them!! How dare I?
so today I presented them with
Caramel Popcorn!!!



I was actually going to make another snack recipe but I didn't have any powdered milk so it was on to this one!

I found this recipe in my old trusty cookbook. This is the one I recieved from my Grandmother as a Bridal Shower gift. It's the Centennial Cook Book for the church that many generations of my family have been baptised, confirmed, married, burried and congregated at. I LOVE this book. You can find just about any old recipe you want to in it!!
and just to give you an idea how long that church has been around, they celebrated the Centennial of the church 37 years ago!!!

I just love things like this!!

Okay back to the recipe!!


I am super bad with not always following recipes exactly.
When cooking I ALWAYS feel that the ingredients and amounts are up to the cook. Adjust as you see fit! Cooking, I believe is emotional. Do what feels right!
Now baking is a completely different story. (in my expierence anyway) Baking is more of a science! Measurements must be EXACT to get the expected outcome!

So, why did I just say all of that?

Because I changed this recipe

Caramel Corn
by Mrs. Albert Spree

2 sticks margarine          1/4 tsp. salt
2 cups brown sugar            1 scant tsp soda
1/2 cup white syrup          7 quarts popped  corn

to this:

1 stick butter            1/8 tsp. slt
1 cup brown sugar         1/2 scant tsp baking soda
1/4 cup white syrup         2 bags microwaved popcorn

Pop the popcorn and pour it into a big bowl. Bring butter, sugar, syrup and salt to a boil and boil for 5 minutes. Remove from heat. Add soda and mix. Drizzle this mixture over the popcorn and stir to coat.
Serve it up in bowls and enjoy!!!
