Short On Time....

but you still want to feed your kiddos a filling breakfast or yourself, if you have that pleasure of eating something hot!!

This is a simple and quick meal that my mom used to make for us growing up! I have not had it myself, in years!! But Thanks to Pioneer Woman's cookbook!! I stumbled upon it again!!

I introduce or reintroduce to you


I'm going to apologize right away for not having STEP BY STEP picture instructions. I was so excited
to be making these again that I completely forgot to take pictures BEFORE they were frying!!



Have your skillet preheating on medium-low while you prepare the ENH.
All you do is use a cup or circle cookie cutter and cut a hole in the middle of your bread.
Heat 2-3 TBSP butter in your skillet and I found it works best to butter both sides of the bread also!
It's easier to flip.
After 1 minute crack your egg into the hole.
Sprinkle with Salt and Pepper.
Flip the bread, sprinkle with more salt and pepper.
Cook until desired doneness.


we like to sprinkle a little cheese onto ours!! and feed it to the hungry savages!!!

I'd also like to chew around on those chubby little fingers and hand!! Little dimply hands just drive me crazy!!!



Now! What to do with those little circles??
My mom used to just butter them and fry them up too but I was needing to fix school lunches for my older two!!




Put some peanute butter and strawberry jelly on them!!



Squish them together and you almost have yourself an 'uncrustable'!!


Put the mini-PB&J's in their sandwich containers and lunch is ready!!

Whew!! I think I out did myself!!
Two meals in 30 minutes!!
I may have to go and sit down!!

Oh my gosh, I make these at least once a week. I love them. Now my son makes me break up the yoke in his, but mine are dippy all the way. Thank you for sharing.
