Broccoli & Cheese Chowder




Broccoli and Cheese Chowder is pretty much the only 'soup' that I make. Everyone in my family eats it right up. So why should I
 bother with anything else?
We usually eat this with hambergers. (my husband is an extreme 'meat n potatoes' kind of guy so vary rarely if ever, do we just eat soup!)
but this particular meal I decided to serve it up with fried Swai that I had in the freezer.

Are you ready for an extremely yummy treat on a very cold evening??

You will need:


onion, frozen broccoli, chicken bouillon cubes, butter, flour, Velveeta, milk, salt, pepper, garlic powder

Start by cooking broccoli in small amount of water until tender and set aside.

Dissolve the 4 bouillon cubes in 2 cups water or use
2 cups of chicken broth.


Melt butter in pan over medium heat


Saute` onion in the butter until tender




Sprinkle with flour, stirring constantly



Add bouillon and cook until smooth and thick


Add Velveeta, stir until cheese has melted.

Blend in milk gradually and add remaining ingredients, salt(if any, velveeta is pretty salty), pepper and garlic powder to taste. Mix well.

Serve it up  and dig in!!
If you have any croutons? throw those on top too!!

It tasted just like it came out of a 'catfish restaurants kitchen'!
